Carol D’Anca, MS, CNS, LDN, became aware of the vast differences in dietary choices within the U.S. early in life, igniting a life-long pursuit of the study of nutrition as it relates to the prevention and reversal of chronic illness. Her presentations have helped raise awareness and inspire dietary and lifestyle modification as essential elements for living long and living well. Mrs. D’Anca is a licensed practitioner, author, founder of her cooking school, "The Academy of Plant Based Cooking and Nutrition and a much sought-after speaker. She received the Women in Leadership Award in 2019 from the In Her Shoes Foundation and was recently designated as one of the top nutritionists in the Chicago area by Expertise.com. The unique combination of her professional training combined with her Mediterranean background and culinary skills offers students a wonderful perspecitve about diet, cooking and lifestyle.
